The healthy Asian Chicken lettuce wraps is a delicious twist on a classic Thai recipe. They are low-carb and gluten-free.

Larb gai is almost as much fun to pronounce as it is to eat. These Asian lettuce wraps are inspired by this.
You will have probably seen this menu if you've ever eaten Thai food. It's not well-known as people tend to skip the "leafy-green" section of Thai menus in favor of the orange beef stir-fry, rice-and noodles or Thai basil chicken stir-fry. These Asian chicken lettuce rolls are not to be sniffed at.
This recipe does not use finely ground rice. It's technically not a chicken larb, but it is a similar recipe.
This is also not traditional, because I make you lettuce wraps with chicken larb-gai instead of a salad you can eat using a fork. In the Slow Cooker Asian Chicken lettuce wraps, I shared my thoughts on this. You must agree with me.

What are the health benefits of Asian chicken lettuce wraps?
This Thai meal is healthy, I'd say. By using lean chicken ground, you can reduce the fat in the dish, and get more protein, along with the peanuts. This dish is low-carb because it uses lettuce wraps. The rest of the meal contains tons of vegetables that are rich in vitamins, minerals and antioxidants. It is easy to change the ingredients according to your preferences.
Ingredients
The larb gai
- 1 tbsp of peanut oil, divided.
- Ground chicken 93% lean, 1/2 lb
- 14 cup diced shallots (about 2 large shallots).
- 1 tbsp fresh minced garlic
- About 1/2 of a large cucumber, diced
- Half a cup of red bell pepper diced. (about half a large pepper
- 1/4 cup diced green onions
- 1 cup Thai basil, roughly chopped
- 3 tbsp fresh mint, diced
- 2 tbsp fish sauce
The Sauce
- Fresh lime juice 2 tbsp
- 1 tbsp fish sauce
- 1 tbsp Thai Chili, minced (1 chili)
- Use sugar-free sweetener instead of coconut sugar to lower carbs.
- 1/2 tbsp fresh garlic, minced
- chopped peanuts (or cashews), as a garnish
- I like cabbage
Instrucciones
Cook
In a medium-sized pan, heat 1/2 teaspoon of peanut oil on MEDIUM. The chicken should be cooked until it is no longer pink in the middle. Transfer the ground chicken to a dish and reserve for later. In a small saucepan, heat the remaining oil over MED-HIGH and cook the garlic and shallots until they become soft. This should take about 2 to 3 minutes.
In a large bowl, combine all ingredients except the fish sauce. Stir in the chicken, garlic and shallots.
Toss
Pour 2 tablespoons of the fish sauce on top of the chicken and vegetables mixture. Toss to coat evenly. Set aside.
Combine
Stir all ingredients together until sugar dissolves.
Fill
Fill each lettuce cup up with the chicken/vegetable mix and sprinkle chopped nuts on top. You can also dip the wrap in the sauce.

Larb is a meat-based salad that is popular in Thailand.
The Thai salad Larb Gai, also known as chicken larb (or laab Gai), is made of chicken ground with shallots and cucumbers. It is flavored with Thai basil, which is absolutely delicious. The salad is topped with a sweet and spicy dressing made of fish sauce, garlic, brown sugar lime juice and diced Thai chili peppers. The salad is topped off with a sweet-spicy dressing that consists of fish sauce and brown sugar. It also contains lime juice, Thai chili peppers, and garlic.

You should use a good sauce if you find that the sauce is too spicy or salty/fishy. Check out this recipe, in which I list the ingredients/instructions for one you could use.
Butter lettuce is my absolute favorite lettuce wrap. But for these lettuce wraps with chicken larb Gai, I LOVE cabbage. It's more sturdy and has a nice crunchy crunch which goes well with the soft, juicy chicken.
Use a pressure washer to clean your hands after dicing a Thai chilli. I thought the kitchen sink would be enough to remove the juices of the chili. Then I rubbed the eyeballs. I was clearly wrong.
How to store asian lettuce wraps
Let the wraps completely cool. Keep the filling in a refrigerator in an airtight container. The filling should last up to four days. Store the lettuce separately. (I assume you tear off pieces of lettuce when you need them.) You can reheat them in the microwave, or in a pan on the stove until they are heated through. The chicken mixture can be stored in the freezer up to three months.
Asian Chicken Lettuce Rolls
Ingredients
- 1 Tbsp Peanut oil, divided (avocado oil for paleo)
- 1/2 Lb 93% Lean Ground Chicken
- 1/4 Cup Shallots diced (about 2 large shallots)
- 1 Tbsp Fresh garlic minced
- 3/4 Cup Cucumber diced (about 1/2 a large cucumber)
- 1/2 Cup Red bell pepper diced (about 1/2 a large pepper)
- 1/4 Cup Green onions diced
- 1/4 Cup Fresh Thai basil roughly chopped
- 3 Tbsp Fresh mint diced
- 2 Tbsp Fish sauce
Notes on the sauce:
- 2 Tbsp Fresh lime juice
- 1 Tbsp Fish sauce
- 1 Tbsp Thai chili, minced (1/2 chili)
- 1 Tbsp Coconut sugar (or sugar free sweetener for lower carb)
